Dear Mr. Surer:
T;,e as-built floor system consists of 2-3/4" X 11-1/2" floor joists,
L = 16' - 411, spaced at 16" D.C. . Calculations indicate that the floor joists
can carry an allowable load of 211 lbs/ftp. T;iis allowable loading is more than
sufficient to sustain any future loading in the refrigerator area.
The proposed stove weighing 2643 lbs. is located over ars area of 02" X 66"
in the north east corner of the building. Calculations also indicate that the
floor joists are more than sufficient to sustain the stove loading for various
assumed loadings. The loadings assumed were conservatively placed on the floor
Joists to obtain maximum pending and shear conditions.

WOOD BURNING BRICK PIZZA OVEN
OPERATING INSTRUCTIONS
****Before using the oven it must first be cured with wood for one
week as follows : lst day - start, a fire in the middle of the oven .
Let it burn for 2-3 hours ( max wood load 1-3 pieces ) . Increase the
fire time a couple of hours every day for a week .
DAILY
1 . Start the fire anywhere inside your new brick pizza oven ,
it wi.l 1 take app.roximatel.y one hour to achieve perfect
cooking temperature . ( Approximately 500-700 degrees
suggested ) .
2 . Always keep the brick oven hot . It will require one to
three pieces of.' wood at all times ( oak, mesquite , apple ,
maple , etc . ) .
3 . At the end of the day , right before closing , place a large
piece of wood ( or two ) inside the oven at the side away from
the fire . Close the metal door tightly .
4 . The next day at the beginning of the shift , open the door
and allow the fresh air to re-ignite the ashes and cinders
left, over from the night before . Put, the pink coals on top
of the ashes from the now empty spot . Place the current
fire where you are going to keep it the rest of the day
( any place in the oven will. do ) Now you are ready !
5 . Remember that, the maximum wood load is 3 large pieces .

SOME HELPFUL HINTS
If the pizza is not cooking in the usual 3-4 minute time period,
increase the amount of fire tower ( maximum 3 large pieces ) .
If the pizza is burning on the bottom too rapidly before the top is
done , slip a piece of standard aluminum foil between the pizza
crust and the oven deck until. the top is done .
If the crust of the pizza is not cooking rapidly enough and the top
is burning , take the pizza as far away as you can from the flame
and change its location on the hot cooking surface of the oven as
often as possible , turning .it several times . ( Remember , oven fire
could be too weak . )
Always keep the oven deck clean by bri.ishing it with a standard oven
deck wire brush fol.lowed by a clean , wet rag .

The oven is in fire proof material, very thick Tuscan fired brick,
steel cast; suitable for long cooking, recommended for pizzamaking
and breads .
Cooking surface in fireproof flat tiles approx. 2" thick.

For cooking bread and pastries : Remove all coals and ashes and
bake at 400-500 degrees .
Do not throw the wood on the fire , please it gently with a steel
paddle .

With time the cooking stones will crack.
Brush clean the exhaust stack at least four times per year.
